Sourdough Crusted Chicken Tenders

Delicious baked breaded chicken tenders using fresh sourdough bread and chicken from our freshly pastured chickens.
Ingredients
- (1 lb (6-8 tenders)) Chicken Tenders
- (10-12 slices) Fresh Sourdough Bread
- (3 large) Pastured Eggs
- (1 tbsp) Italian Seasoning
- (1 tsp) Garlic Powder
- (1 tsp) Onion Powder
- (1 tbsp) Worcestershire Sauce
- (4 tbsp) Grass Fed Butter
- (1 tsp (plus more per taste)) Salt
- (1/2 tsp (plus more per taste)) Black Pepper
- (1/2 cup) Flour
Directions
- Preheat oven to 425 F
- If you have a baking rack, place it on a rimmed baking sheet (you can also just place chicken directly on baking sheet if you don't have a rack, they just may not get as crispy)
- Season chicken tenders with some salt and pepper. (P.S. you can also use boneless chicken breast instead, just cut lengthwise into "chicken tender" sized pieces)
- Using a food processor, pulse bread slices to create fine bread crumbs (may need to work in batches depending on size of machine). Add garlic and onion powders, Italian seasoning, 1 tsp salt, and 1/2 tsp black pepper. Pulse to mix thoroughly.
- Get out three separate small bowls. Bowl #1: add plain flour. Bowl #2: lightly whip eggs and add Worcestershire sauce. Bowl #3: add seasoned breadcrumbs.
- Take each tender and coat with flour, knocking off any excess flour before next step.
- Dip into egg wash, then into the breadcrumb bowl. Cover thoroughly with breadcrumbs, then place on prepared baking sheet.
- Continue with each tender.
- Place 1/2 tbsp of butter on top of each tender. Bake in oven for 15-20 minutes or until cooked through.
