Freezer Friendly Breakfast Burritos

Who doesn't love a breakfast burrito? These are filled with our Pastured Pork Sausage, pastured eggs and fresh veggies. They are freezer friendly and great for breakfast on school mornings!

Ingredients
- (2 tsp) Olive Oil, divided
- (1 pound) Ground Breakfast Sausage
- (1 medium) Red Bell Pepper, finely chopped
- (1 small) Sweet Onion, finely chopped
- (1 large) Fresh Tomato, finely chopped
- (12 large) Pastured Eggs
- (1/2 tsp) Black Pepper
- (1 cup) Shredded Cheddar Cheese
- (14) 8 inch Tortillas
Directions
- Heat 1 tsp. oil in nonstick skillet over medium heat. Add sausage, onions and peppers and cook for 5 minutes, or until cooked through.
- Add tomatoes and cook 2 minutes.
- Add eggs to pan and cook for 3-4 minutes or until eggs are set.
- Stir in cheee. Remove from heat.
- Fill tortillas with ½ cup egg mixture, roll into burrito and lay seam-side-down.
- To freeze place on a parchment-line baking sheet. Freeze 1 hour, transfer to freezer-safe zip top bag and return to freezer.
- To reheat burritos, remove from freezer, wrap in paper towel and microwave on HIGH 1-2 minutes.
NOTES
Wrapping in a paper towel before mircowaving will absorb moisture and help prevent your burrito from getting soggy.
