Join Rachel and Matt for an in-depth class on the art of breaking down a whole chicken into individual cuts. Over the last 12 years, the Palma's have processed over 35,000 chickens by hand, and cut up approximately 10,000 of those. 

A skill possessed by nearly every home cook just a few decades ago, cutting up a whole chicken in today’s western society is largely known only by chefs and butchers. Many home cooks are intimidated by the idea of breaking down poultry into individual parts.

But did you know it’s actually quite simple to break down a chicken? And when you gain the confidence to do so in your own kitchen, you’ll not only take your cooking to the next level, but you can also save hundreds if not thousands of dollars a year (depending on how much chicken you eat!)

In the first portion of our Chicken Cut-Up Class we will:

  1. Familiarize you with the anatomy of the chicken
  2. Demonstrate how to cut the chicken into every cut possible including:
     Bone-In Whole Breast | Bone-In Split Breast | Boneless Breast | Tenders | Leg Quarters | Bone-In Thigh | Boneless Thigh | Drumsticks | Whole Wings | Wing Drumettes | Wing Flats | Backs and Neck
  3. Share tips for handling and freezing chicken

In the second portion of the class:
1.Get hands-on experience and practice!
2. Each participant will get to cut up 5 whole chickens
3. Cut them into whatever cuts you like best
4. Have Matt and Rachel available to walk you through each step and answer questions
5. Package the cuts into portions that are right for your family
6. Take all of your chicken pieces home with you!

Here's an example of the chicken you will take home (dependent on what cuts you would like)
10 boneless breasts | 10 tenders | 10 thighs | 10 drumsticks | 20 wing pieces (10 drumettes + 10 flats) | 5 chicken backs (to make up to 10 quarts of broth) | and of course, CONFIDENCE to take back to your own kitchen!

- Due to the nature of this event which includes the use of sharp knives, tickets are restricted to 18+
- Children 12+ are welcome to attend with parents to observe, but will not be permitted to participate or handle knives
- Nursing babies are welcome, of course!

Each participant's station will include:
-Cutting board
-Sharp knife
-Apron
-Nitrile gloves
-1 Cut-resistant glove
-Bags, tape, and labels for packaging chicken
