Stew or “spent” hens are egg laying hens which have retired from the egg laying business. The flavor and nutrition from these birds are incredible as they have been living on and eating fresh pasture for approximately 3 years – which is evident in their rich gold/yellow fat!
The meat from stew hens is tough if cooked like any other chicken. These birds must be slow cooked or stewed. They make the best broth and soups on the planet and are a special treat for us and our customers when we have them in stock!
